Updates `docker-bake.hcl` to include a new `ubuntu-26-10` target and adds it to both the `default` and `artifacts` groups. The new target inherits from `_sunshine`, uses `BASE=ubuntu` and `TAG=26.10`, and sets the matching image variant label. Refactors `linux_build.sh` to use switch instead of if/elif, and fixes some sonar issues.
