Adds AWS_DEFAULT_REGION to the checksum workaround for S3-compatible storage providers.
Issue #800 reports that on a cloud provider with strict security defaults, the sidecar could not connect to the bucket until AWS_DEFAULT_REGION was set alongside AWS_REQUEST_CHECKSUM_CALCULATION and AWS_RESPONSE_CHECKSUM_VALIDATION. The docs cover the checksum variables but not the region variable, which is the part that unblocked that setup.
