Enforce style guide: fix long sentence and Windows path display

Summary

Minor style fixes in pages changed during the past week; all other recent changes already match the docs' voice and formatting conventions.

Changes

• platform/locations.mdx: split a 35+ word sentence in "Check what's available to your project" and replaced the passive "offered to you" with "available to you".
• datumctl/quickstart.mdx: fixed doubled backslashes in the Windows install path so it renders as C:\Tools\datumctl\.
