Fix docs build: use //:docs instead of removed //:docs_combo_experimental

'//:docs_combo_experimental' no longer exists in the pinned score_docs_as_code version (renamed/removed upstream). This switches the docs build step to '//:docs' (same CLI, still accepts --github_user/--github_repo), fixing the 'Build documentation' step failure seen in PR #320.
