Add Mecatl to org README alongside ToolHive - #18

Conversation
Restructure the profile README to lead with Mecatl, the new open source cloud-native agent harness, followed by ToolHive as its own peer section rather than the page's sole identity. Adds a Mecatl mascot image and a lightweight text-based wordmark SVG (ToolHive's logo is hand-drawn vector art, not a font, so this approximates it rather than matching exactly).
